1. Activate the Yeast

In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until it becomes frothy.

2. Mix the Dough

In a large mixing bowl, combine the flour and salt. Make a well in the center and add the activated yeast mixture and olive oil. Stir until a dough begins to form.

3. Knead the Dough

Transfer the dough to a floured surface and knead for about 10 minutes, until the dough is smooth and elastic.

4. Let it Rise

Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm area for about 1 hour, or until it has doubled in size.

5. Shape the Pitas

Once risen, punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball and then flatten it into a disc about 1/4 inch thick.
