Prepare the Dough
In a large mixing bowl, combine the warm water and active dry yeast. Let it sit for about 5 minutes until frothy. Add the flour, salt, chopped rosemary, and olive oil. Mix until a dough forms.
Knead the Dough
Transfer the dough to a floured surface and knead it for about 10 minutes until it becomes smooth and elastic.
First Rise
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm area for 1 hour or until doubled in size.
Shape the Baguettes
Punch down the risen dough and divide it into two equal pieces. Shape each piece into a long baguette, tapering the ends.
Second Rise
Place the shaped baguettes on a floured baking sheet. Cover them with a damp cloth and let them rise for another 30 minutes.
Preheat the Oven
Preheat the oven to 450°F (230°C).
Add Cheese and Bake
Sprinkle the grated Parmesan cheese on top of the baguettes. Use a sharp knife to make a few slashes on the surface. Bake in the preheated oven for 20-25 minutes until golden brown.
Cool and Serve
Remove the baguettes from the oven and let them cool on a wire rack before slicing. Serve warm or at room temperature.
