Marinate the Chicken
In a bowl, mix olive oil, smoked paprika, garlic powder, salt, and black pepper. Add the chicken breasts and coat them well. Let them marinate for at least 30 minutes.

Grill the Chicken
Preheat your grill to medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side, or until fully cooked and juices run clear. During the last minute of grilling, place cheddar cheese on top of the chicken to melt.

Toast the Bread
While the chicken is grilling, you can toast the bread on the grill for about 1-2 minutes until it is golden brown.

Assemble the Sandwich
Once the chicken is done, place it on the toasted bread. Spread guacamole generously over the chicken, followed by a drizzle of chipotle mayo. Close the sandwich and press down gently.

Cut the sandwich in half and serve immediately, accompanied by your choice of sides.
