1. Prepare the Chicken
Season the chicken breasts with mesquite seasoning, salt, and pepper. Let them marinate for about 15 minutes.
2. Cook the Bacon
In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels.
3. Grill the Chicken
Preheat the grill to medium-high heat. Brush the grill grates with olive oil. Grill the chicken breasts for about 6-7 minutes on each side or until cooked through and internal temperature reaches 165°F (75°C). During the last 2 minutes of grilling, add cheddar cheese on top of the chicken to melt.
4. Toast the Buns
While the chicken is grilling, toast the burger buns on the grill until golden brown.
5. Assemble the Sandwich
On each toasted bun, layer lettuce, grilled chicken with melted cheese, crispy bacon, sliced tomatoes, and onions. Drizzle with ranch dressing and top with the other half of the bun.
6. Serve
