Preparation Steps
1. Prepare the Steak
Season the Black Angus steak with salt and black pepper on both sides. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let it rest.
2. Sauté the Onions
In the same skillet, add another tablespoon of olive oil. Slice the onion thinly and add it to the skillet. Sauté for about 5-7 minutes until the onions are caramelized and golden brown. Remove from heat.
3. Prepare the Rolls
Slice the French rolls in half and toast them lightly in a toaster or under the broiler until golden brown.
4. Assemble the Sandwiches
Slice the rested steak thinly and layer it on the bottom half of each toasted roll. Top with sautéed onions and a slice of Swiss cheese. Place the sandwiches under the broiler for a minute or two until the cheese is melted.
5. Prepare the Au Jus
In a small saucepan, heat the beef broth over medium heat until warm. This will be served alongside the sandwiches for dipping.
6. Serve
Spread horseradish sauce on the top half of the rolls, place them on top of the cheese, and serve immediately with a side of warm Au Jus.
