1. Prepare the Vinaigrette
In a small bowl, whisk together red wine vinegar, olive oil, Dijon mustard, salt, and black pepper until well combined. Set aside.
2. Assemble the Sandwich
Slice the Italian sub rolls in half lengthwise. Layer the pepperoni, salami, spicy capicola, smoked ham, provolone cheese, black olives, shredded lettuce, tomato slices, onion slices, and banana peppers evenly between the rolls.
3. Add the Vinaigrette
Drizzle the prepared vinaigrette over the fillings in each sandwich.
4. Toast the Sandwiches
Place the assembled sandwiches on a baking sheet and broil in the oven for about 3-5 minutes, or until the cheese is melted and the bread is lightly toasted.
5. Serve
Remove from the oven, cut in half if desired, and serve immediately while warm.
