Prepare the Brisket
Season the brisket with salt and pepper. Place it in a slow cooker and cover with BBQ sauce. Cook on low for 8-10 hours, until tender.

Prepare Crispy Onions
In a bowl, mix flour, cornstarch, salt, and pepper. Dredge the sliced onions in the mixture. In a large skillet, heat vegetable oil over medium heat. Fry the onions until golden brown and crispy. Remove and drain on paper towels.

Assemble the Sub
Once the brisket is done, shred it with two forks. Fill each sub roll with the shredded brisket and top with crispy onions. Add pickles if desired.
