Baguette Preparation

Activate the Yeast
In a small bowl, combine warm water (about 110°F) with sugar and yeast. Let it sit for about 5-10 minutes until frothy.

In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture. Gradually mix the flour into the liquid until a shaggy dough forms.

Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. You may need to add a little more flour if the dough is sticky.

Place the kneaded dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.

Once risen, punch down the dough and divide it into 2-3 equal pieces. Shape each piece into a long loaf by rolling it gently on a floured surface.

Place the shaped baguettes on a floured baking sheet or a baguette pan. Cover with a damp cloth and let rise for another 30-45 minutes.
