Assemble the Enchiladas
Preheat the oven to 375°F (190°C). Spread a thin layer of enchilada sauce on the bottom of a baking dish. Take a corn tortilla, add a spoonful of the meat mixture, refried beans, and a sprinkle of cheese. Roll the tortilla tightly and place seam-side down in the baking dish. Repeat until all tortillas are filled.

Add Sauce and Cheese
Once all enchiladas are in the baking dish, pour the remaining enchilada sauce over the top. Sprinkle the remaining cheese on top.

Bake
Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for another 10 minutes, or until the cheese is bubbly and golden.

Prepare Tacos
While the enchiladas are baking, warm the remaining corn tortillas in a skillet. Fill each tortilla with the meat mixture, chopped tomatoes, and chopped cilantro. Top with sour cream and serve with lime wedges.

Serve
Serve the enchiladas hot from the oven with tacos on the side. Garnish with additional cilantro and lime wedges.
