1. Prepare Filling
In a skillet, heat the cooked chicken or ground beef over medium heat. Add spices (cumin and chili powder) to taste and mix until heated through.
2. Assemble Chimichangas
Take one flour tortilla and place 1/2 cup of the meat filling in the center. Add a handful of lettuce, 1/4 cup of guacamole, and 1/4 cup of sour cream on top. Fold the sides of the tortilla over the filling and then roll it up tightly.
3. Fry the Chimichangas
In a deep pan, heat oil over medium-high heat. Carefully place the rolled chimichangas seam-side down in the hot oil. Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
4. Serve
Serve hot with remaining guacamole and sour cream on the side.
