    Prepare the Rice

    Start by cooking the white rice according to package instructions. Set aside once done.

    Sauté the Aromatics

    In a large skillet, heat the olive oil over medium heat. Add the sliced onion and minced garlic, sautéing until the onion is translucent.

    Cook the Tomatoes

    Add the diced tomatoes to the skillet and cook for about 5 minutes until they soften.

    Cook the Seafood

    Add the clams, scallops, octopus, shrimp, and mussels to the skillet. Pour in the fish stock (or water) and bring to a simmer.

    Add the Tilapia

    Gently place the tilapia fillets on top of the seafood mixture. Season with salt and black pepper. Cover and cook for about 10-12 minutes until the fish is cooked through and the seafood is tender.

    Garnish and Serve

    Once cooked, remove from heat and garnish with chopped cilantro. Serve hot over a bed of white rice.
