Prepare the Chicken
In a large skillet, heat olive oil over medium heat. Add the chicken thighs and season with salt and pepper. Brown the chicken on both sides for about 5-7 minutes. Remove the chicken from the skillet and set aside.

Make the Mole Sauce
Add the peanut butter, tomato sauce, chicken broth, cocoa powder, cumin, cinnamon, and chipotle pepper to the skillet. Stir well to combine and bring to a simmer.

Combine and Cook
Return the browned chicken to the skillet, ensuring it is coated with the mole sauce. Cover and let it simmer on low heat for 25-30 minutes, or until the chicken is cooked through and tender.

Serve the mole de pollo hot with warm tortillas on the side.
