Our latest creation is a mouth-watering combination of well-seasoned strips of grilled chicken, steak, “chorizo” (Mexican sausage), nopales (cactus), and “chicharrón” (pork rinds) and pierna de puerco over melted cheese. This exotic entrée is served in a traditional stone bowl with warm tortillas and a side of rice and beans.

    Prepare the Meats

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chorizo and cook until browned. Remove and set aside. In the same skillet, grill the chicken and steak until fully cooked, seasoning with salt, pepper, and garlic powder. Remove and slice into strips.

    Cook the Nopales

    In the same skillet, add another tablespoon of olive oil and sauté the diced nopales until tender, about 5 minutes. Season with salt and pepper.

    Assemble the Molcajete

    In a traditional stone bowl (molcajete), layer the cooked meats, nopales, and crushed chicharrón. Top generously with shredded cheese.

    Melt the Cheese

    Place the molcajete under a broiler for 5-7 minutes, or until the cheese is melted and bubbly.

    Serve

    Serve the molcajete hot with warm tortillas, a side of rice, and beans.
