Assemble the Enchiladas
Preheat the oven to 350°F (175°C). Take a corn tortilla, add a generous amount of your choice of filling (chicken or beef), top with a little shredded cheese, and roll it up tightly. Place seam side down in a greased baking dish.

Add Sauce and Cheese
Repeat the assembly process until all tortillas are filled and placed in the baking dish. Pour the enchilada sauce evenly over the top, then sprinkle with the remaining shredded cheese.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is melted and bubbly.

Serve
Remove from the oven, let cool for a few minutes, then serve topped with sour cream and chopped cilantro.
