    Prepare the Pork

    Heat olive oil in a large pot over medium-high heat. Season the pork loin with salt and black pepper. Sear the pork on all sides until browned, about 5-7 minutes. Remove the pork and set aside.

    Cook the Vegetables

    In the same pot, add chopped onion, minced garlic, and diced green bell peppers. Sauté for about 5 minutes until softened.

    Make the Sauce

    Add halved tomatillos, cumin, and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 10 minutes until tomatillos are soft.

    Combine and Braise

    Return the seared pork to the pot. Cover and simmer on low heat for 1.5 to 2 hours until the pork is tender and easily shredded.

    Serve

    Shred the pork in the sauce and serve warm with tortillas on the side.
