Prepare the Rub
In a bowl, combine paprika, brown sugar, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well.

Season the Pork
Rub the spice mixture all over the pork shoulder, making sure to cover all surfaces. Let it sit for at least 1 hour, or preferably overnight in the refrigerator.

Prepare the Smoker
Preheat your smoker to 225°F (107°C) using your choice of wood chips.

Smoke the Pork
Place the seasoned pork shoulder in the smoker and smoke for about 15 hours, or until the internal temperature reaches 190°F (88°C).

Prepare the Slaw
Serve the pulled pork on toasted ciabatta rolls with your choice of savory slaw.
