Prepare the Potatoes
Wash and cut the russet and sweet potatoes into fry shapes. Soak them in cold water for 30 minutes to remove excess starch.

Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and cut them in half. Toss them in olive oil, salt, and pepper.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Russet Fries
Fry the russet fries in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then season with salt.

Fry the Sweet Potato Fries
Fry the sweet potato fries in batches until golden brown, about 3-5 minutes. Remove and drain on paper towels, then season with salt.

Fry the Brussels Sprouts
Fry the Brussels sprouts until they are crispy and golden, about 4-6 minutes. Remove and drain on paper towels, then season with salt.

Serve
Arrange the fries and Brussels sprouts on a platter and serve with your favorite dipping sauce.
