Puff Pastry Preparation

    Make the Dough

    In a large bowl, mix the flour and salt. Add the cubed butter and rub it into the flour with your fingers until the mixture resembles coarse crumbs.

    Gradually add the cold water, one tablespoon at a time, mixing just until the dough comes together. Do not overwork the dough.

    Chill the Dough

    Shape the dough into a rectangle, wrap it in plastic wrap, and refrigerate for at least 1 hour.

    Roll and Fold

    Roll the chilled dough into a large rectangle on a floured surface. Fold it in thirds like a letter, turn it 90 degrees, roll it out again, and repeat this process three times.

    Chill Again

    After the final fold, wrap the dough in plastic wrap and refrigerate for another 30 minutes before baking.

Baking the Pastry

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Shape and Bake

    Roll out the dough into thin sheets. Cut into equal rectangles and place them on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until golden brown and crisp.

    Remove the baked pastry from the oven and let it cool completely on a wire rack.

Filling Preparation

    Whip the Cream

    In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Whip until soft peaks form.

Candied Pecans Preparation

    Cook the Pecans

    In a skillet over medium heat, melt the butter. Add the chopped pecans, sugar, and cinnamon, stirring constantly until the sugar melts and coats the pecans, about 5-7 minutes.

    Cool the Pecans

    Spread the candied pecans on a parchment-lined baking sheet to cool.

Assembly

    Layer the Pastry

    On a serving platter, place one layer of puff pastry. Spread a layer of dulce de leche over it, then add a layer of whipped cream.

    Repeat Layers

    Continue layering with the remaining puff pastry, dulce de leche, and whipped cream until all ingredients are used, finishing with a layer of whipped cream on top.

    Garnish

    Sprinkle the candied pecans over the top, add a pinch of black sea salt, and decorate with fresh berries.
