Preparation of Ingredients

Prepare the Tortilla Chips

Spread the corn tortilla chips evenly on a baking sheet and bake in a preheated oven at 350°F (175°C) for about 10 minutes until they are crispy. Remove and set aside.

Prepare the Toppings

While the chips are baking, prepare the toppings. Slice the radishes, avocado, and crumble the queso fresco. Set aside.

Cook the Eggs

In a skillet over medium heat, add a little oil and crack in the eggs. Cook sunny side up until the whites are set but the yolks are still runny, about 3-4 minutes. Season with salt and black pepper to taste.

Assembly

Assemble the Chilaquiles

In a large serving dish, layer the baked tortilla chips. Pour the tomatillo salsa over the chips ensuring they are well coated.

Add the Crab

Gently distribute the blue crab meat over the salsa-coated chips.

Add the Toppings

Top the dish with fresh cilantro, pickled onions, sliced radishes, and crumbled queso fresco.

Finish with Eggs and Avocado

Carefully place the sunny side up eggs on top of the chilaquiles and add the slices of avocado. Season with additional salt and pepper if desired.
