Preparation

Slice the Plantains

Peel the ripe plantains and slice them diagonally into 1-inch thick pieces.

Prepare the Fresno Pepper

Remove the stem and seeds from the Fresno pepper, then slice it thinly.

Caramelizing

Melt Butter

In a large skillet, melt the unsalted butter over medium heat.

Add Brown Sugar

Once the butter is melted, add the brown sugar to the skillet and stir until the sugar has dissolved and the mixture is bubbling.

Cook the Plantains

Add the sliced plantains to the skillet and cook for about 3-4 minutes on each side until they are golden brown and caramelized.

Finishing Touches

Add Fresno Peppers

Once the plantains are caramelized, add the sliced Fresno pepper to the skillet and toss everything together for an additional 1-2 minutes.

Season with Smoked Sea Salt

Remove the skillet from heat and sprinkle the smoked sea salt over the plantains and peppers. Toss gently to combine.
