Method

Preparation

  1. 1

    Slice the Plantains

Peel the ripe plantains and slice them diagonally into 1-inch thick pieces.

  2. 2

    Prepare the Peppers

Remove the stems and seeds from the Fresno and jalapeno peppers. Slice them thinly.

  3. 3

    Toast the Pecans

In a dry skillet over medium heat, toast the pecans until golden and fragrant, about 5 minutes. Stir occasionally to prevent burning.

Cooking

  1. 4

    Caramelize the Plantains

In a large skillet, melt the butter over medium heat. Add the sliced plantains and cook until golden brown on both sides, about 3-4 minutes per side.

  2. 5

    Make the Sauce

Once the plantains are caramelized, sprinkle the brown sugar over them and pour in the heavy cream. Stir gently to combine and let it simmer for about 5 minutes until the sauce thickens slightly.

  3. 6

    Add the Peppers

Add the sliced Fresno and jalapeno peppers to the skillet. Cook for another 2-3 minutes, stirring occasionally, until the peppers are slightly softened but still vibrant.

Serving

  1. 7

    Finish and Serve

Remove the skillet from heat. Gently fold in the dried cranberries and toasted pecans. Serve warm as a side dish or dessert.
