Preparation of Ingredients

Prepare Chicken Tinga
In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, and sauté until softened. Add the chicken breasts, diced tomatoes, salt, black pepper, and chipotle peppers. Cover and simmer for about 20-25 minutes until the chicken is cooked. Shred the chicken and mix it back into the sauce. Set aside.

Prepare Dry Rubbed Flank Steak
In a small bowl, mix paprika, cumin, garlic powder, onion powder, salt, and black pepper to create the dry rub. Rub the mixture all over the flank steak. Grill or pan-sear the steak over medium-high heat for about 5-7 minutes on each side for medium-rare. Let it rest before slicing thinly.

Prepare Carnitas
In a slow cooker, combine the pork shoulder, orange juice, lime juice, cumin, salt, and black pepper. Cook on low for about 8 hours or until the pork is tender and easily shredded. Shred the pork and set aside.

Prepare Toppings
Chop cilantro and onion. Prepare or purchase guacamole and sour cream, and have pico de gallo ready for serving.

Warm Tortillas
Heat flour and corn tortillas on a skillet or directly over the flame for a few seconds on each side until warmed and pliable.

Assemble Tacos
On each tortilla, add a layer of chicken tinga, dry rubbed flank steak, or carnitas. Top with chopped cilantro, onion, guacamole, sour cream, and pico de gallo as desired.

Serve
Serve the assembled tacos immediately while warm, with lime wedges on the side if desired.
