Method

Preparing the Halibut

    Season the Halibut

    Pat the halibut fillets dry with paper towels. Season both sides with salt and black pepper.

    Sear the Halibut

    In a large skillet, heat olive oil over medium-high heat. Add the halibut fillets and sear for 4-5 minutes on each side, or until golden brown and cooked through. Remove from skillet and keep warm.

Making Pineapple Chipotle Fried Rice

    Sauté Onions and Garlic

    In the same skillet, add vegetable oil over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes. Add minced garlic and sauté for an additional minute.

    Add Pineapple and Chipotle

    Stir in the pineapple chunks and chipotle in adobo sauce, cooking for another 2-3 minutes until heated through.

    Combine with Rice

    Add the cooked jasmine rice and soy sauce, mixing well to combine. Cook for an additional 4-5 minutes, stirring occasionally. Finally, add chopped green onions and mix.

Garlic Roasted Broccolini

    Prep the Broccolini

    Preheat the oven to 425°F (220°C). Trim the ends of the broccolini and place on a baking sheet.

    Season and Roast

    In a small bowl, mix together minced garlic, olive oil, salt, and black pepper. Drizzle over the broccolini and toss to coat. Roast in the oven for 15-20 minutes until tender and slightly charred.

Making the Salad

    Dice the avocado, tomato, and cucumber into bite-sized pieces. In a mixing bowl, combine with chopped cilantro.

    Make the Vinaigrette

    In a small bowl, whisk together lime juice, olive oil, salt, and black pepper. Pour over the salad and toss gently to combine.
