Prepare the Guava Glaze

Combine Ingredients
In a small saucepan, combine guava paste, honey, soy sauce, lime juice, minced garlic, salt, and black pepper. Stir well to combine.

Heat the Glaze
Place the saucepan over medium heat and cook for about 5-7 minutes, stirring occasionally until the mixture thickens and becomes syrupy. Remove from heat and set aside.
Prepare the Salmon

Preheat Grill
Preheat your grill to medium-high heat.

Cook the Jalapeno Rice

Rinse the Rice
Rinse the white rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed rice, water, chopped jalapeno, and salt. Bring to a boil over high heat.

Simmer the Rice
Once boiling, reduce the heat to low, cover, and simmer for about 18-20 minutes or until the rice is tender and water is absorbed. Fluff with a fork.
Make the Salvadorian Cabbage Relish

Combine Ingredients
In a large bowl, combine shredded cabbage, grated carrots, lime juice, salt, and chopped cilantro. Mix well to combine.

Let it Marinate
Let the relish sit for at least 10 minutes to allow flavors to meld.
Assemble the Dish

Plate the Rice
On each plate, place a portion of jalapeno rice as the base.

Add Salmon
Place a grilled salmon fillet on top of the jalapeno rice.

Top with Guava Glaze
Drizzle the guava glaze over the salmon.

Add Cabbage Relish
Finally, add a generous portion of Salvadorian cabbage relish on top of the salmon.
