Grilled Cheese Sandwich

    Prepare the Sautéed Vegetables

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and peppers, sautéing until they are soft and slightly caramelized, about 5-7 minutes. Remove from heat and set aside.

    Assemble the Sandwich

    Layer the manchego cheese and white cheddar cheese on two slices of brioche bread. Top with sautéed peppers, onions, arugula, diced tomato, cilantro, and arbol crema. Place the other two slices of brioche on top to form two sandwiches.

    Grill the Sandwich

    In the same skillet, melt 1 tablespoon of butter over medium heat. Place the sandwiches in the skillet and grill until golden brown, about 3-4 minutes per side. Add more butter if needed.

Tomato Soup

    Sauté Aromatics

    In a pot, heat 1 tablespoon of olive oil over medium heat. Add diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.

    Add Tomatoes and Broth

    Stir in the canned crushed tomatoes and vegetable broth. Add salt, black pepper, dried basil, and sugar. Bring to a simmer.

    Simmer the Soup

    Let the soup simmer for about 15-20 minutes, stirring occasionally. Adjust seasoning to taste.

    Blend the Soup (Optional)

    For a smoother texture, use an immersion blender to blend the soup to your desired consistency.
