Preparation of Salad Base

Prepare Romaine Lettuce
Wash the romaine lettuce thoroughly under cold water. Dry it with a salad spinner or pat it dry with paper towels. Chop into bite-sized pieces and place in a large salad bowl.

Prepare Cilantro
Rinse the cilantro under cold water, shake off excess water, and chop finely. Add to the bowl with the romaine lettuce.
Making the Dressing

Combine Ingredients
In a blender or food processor, add mayonnaise, lemon juice, garlic cloves, anchovy paste, green chile, olive oil, salt, and black pepper.

Blend the Dressing
Blend the ingredients until smooth and creamy. Taste and adjust seasoning if necessary, adding more salt or pepper as desired.
Preparing Toppings

Fry Plantains
Peel and slice the plantains diagonally into thick pieces. Heat oil in a frying pan over medium heat. Fry the plantain slices until golden brown on both sides, about 2-3 minutes per side. Remove and drain on paper towels.

Prepare Parmesan Cheese
Grate the Parmesan cheese using a grater or food processor and set aside for topping the salad.

Add Toppings
Top the salad with fried plantains and sprinkle grated Parmesan cheese on top. Optionally, add your choice of protein (grilled chicken, shrimp, steak, or salmon) to the salad.
