Cook the bacon
In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.

Add the vegetables
Add the diced bell peppers, diced onion, and tomatoes to the skillet with the potatoes. Stir well and cook for another 5-7 minutes until the vegetables are softened.

Mix in the bacon
Stir the crispy bacon back into the skillet with the potato and vegetable mixture. Ensure everything is evenly combined.

Add the cheese
Sprinkle the shredded white cheddar cheese over the mixture in the skillet. Cover and let it melt for about 3-5 minutes.
Cooking the Eggs and Gravy

Cook the eggs
In a separate non-stick skillet, heat a little oil over low heat. Crack the eggs into the skillet and cook until the whites are set but the yolks remain runny (sunny side up), about 3-4 minutes.

Heat the sausage gravy
In a small saucepan, heat the sausage gravy over medium heat until warmed through.

Serve the potato and bacon mixture on plates. Top each serving with a sunny side up egg and drizzle with warm sausage gravy. Enjoy!
