    Cook the bacon

    In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.

    Prepare the potatoes

    In the same skillet with the bacon fat, add the diced potatoes. Season with salt, black pepper, and garlic powder. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are golden brown and tender.

    Add the vegetables

    Add the diced bell peppers, diced onion, and tomatoes to the skillet with the potatoes. Stir well and cook for another 5-7 minutes until the vegetables are softened.

    Mix in the bacon

    Stir the crispy bacon back into the skillet with the potato and vegetable mixture. Ensure everything is evenly combined.

    Add the cheese

    Sprinkle the shredded white cheddar cheese over the mixture in the skillet. Cover and let it melt for about 3-5 minutes.

    In a separate non-stick skillet, heat a little oil over low heat. Crack the eggs into the skillet and cook until the whites are set but the yolks remain runny (sunny side up), about 3-4 minutes.
