Method

For the Mojo Braised Pork

    Prepare the Marinade

    In a large bowl, combine the orange juice, lime juice, minced garlic, cumin, oregano, salt, black pepper, and olive oil to create the marinade.

    Marinate the Pork

    Place the pork shoulder in a large resealable bag and pour the marinade over it. Seal the bag and refrigerate for at least 4 hours, preferably overnight.

    Preheat Oven and Prepare Pork

    Preheat your oven to 300°F (150°C). Remove the pork from the marinade and place it in a roasting pan. Pour the remaining marinade over the pork.

    Braise the Pork

    Cover the pan with aluminum foil and braise in the oven for about 4 hours until the pork is tender and easily shredded.

    Shred the Pork

    Once cooked, remove the pork from the oven, let it cool slightly, and shred it with two forks.

For the Sandwich Assembly

    Toast the Buns

    Toast the torta buns until golden brown.

    Assemble the Sandwich

    Layer the shredded mojo pork, smoked ham, Swiss cheese, and house-made pickles on the bottom half of each bun.

    Add Dijonnaise and Close Sandwich

    Spread the garlic maple Dijonnaise on the top half of each bun and place it on top of the assembled ingredients.

    Grill the Sandwiches

    Press down gently on the sandwiches to compress them slightly, then grill on a panini press or skillet until the cheese is melted.

For the Patatas Bravas

    Preheat Oven

    Preheat the oven to 425°F (220°C).

    Prepare Potatoes

    Wash and dice the potatoes into bite-sized cubes. Toss them with olive oil, paprika, garlic powder, and salt in a large bowl.

    Roast the Potatoes

    Spread the potatoes on a baking sheet in a single layer and roast in the oven for about 30-35 minutes until golden and crispy, flipping halfway through.

For the Tomato Saffron Aioli

    Mix Aioli Ingredients

    In a mixing bowl, combine the mayonnaise, tomato paste, saffron threads, minced garlic, lemon juice, and salt.

    Finalize Aioli

    Whisk until smooth and well combined. Adjust seasoning to taste.
