Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 425°F (220°C).
- 2
Prepare Ramekins
Grease four ramekins with 2 tablespoons of unsalted butter and dust with cocoa powder to prevent sticking. Set aside.
Making the Cake Batter
- 3
Melt Butter and Chocolate
In a medium saucepan, melt 1 cup of unsalted butter and 8 oz of semi-sweet chocolate over low heat, stirring until smooth. Remove from heat and let cool slightly.
- 4
Mix Sugar and Eggs
In a mixing bowl, whisk together 1 cup of granulated sugar, 2 whole eggs, and 2 egg yolks until combined and slightly thickened.
- 5
Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture, whisking continuously until fully combined.
- 6
Add Dry Ingredients
Sift in 1 tablespoon of all-purpose flour, add 1 teaspoon of vanilla extract, and a pinch of salt. Gently fold until just combined.
Baking the Cakes
- 7
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
- 8
Bake
Place the ramekins in the preheated oven and bake for 12-14 minutes, until the edges are firm but the center is still soft.
- 9
Cool Slightly
Remove from the oven and let the cakes cool in the ramekins for about 1 minute.
- 10
Serve
Carefully invert each ramekin onto a plate. Serve immediately, allowing the molten chocolate center to flow out.
