Pancake Preparation

Mix Dry Ingredients
In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until evenly combined.

Combine Wet Ingredients
In a separate bowl, whisk together the buttermilk, egg, and melted butter until smooth.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; some lumps are okay.

Heat Pan
Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.

Cook Pancakes
Pour 1/3 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for an additional 1-2 minutes, until golden brown.

Serve
Stack the pancakes on a plate and keep warm while you prepare the bacon and eggs.
Sweet Peppered Bacon

Cook Bacon
In a skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Flip occasionally to ensure even cooking.

Add Pepper and Maple Syrup
Once the bacon is cooked, sprinkle black pepper over it and drizzle with maple syrup. Cook for an additional 1-2 minutes, allowing the syrup to caramelize slightly.

Remove from Heat
Transfer the bacon to a paper towel-lined plate to drain excess grease.

Season and Cook
Sprinkle with salt and pepper to taste. Cook until the whites are set and the yolks are done to your preference (sunny side up, over easy, etc.). This should take about 3-5 minutes.
