After curing, drain excess lemon juice and season the scallops with smoked sea salt to taste.
Prepare the Vegetables

Dice the avocado, red onion, celery, green onion, jalapeño (remove seeds for less heat), and heirloom tomatoes into small, even pieces. Add them to a large mixing bowl.
Make the Bloody Mary Dressing

Combine Ingredients
In a separate bowl, whisk together the tomato juice, Worcestershire sauce, hot sauce, lemon zest, black pepper, and celery salt until well combined.
Assemble the Ceviche
