Method

For the Barbacoa New York Strip

    Prepare the Steak

    Rub the New York Strip Steak with olive oil, salt, and black pepper on both sides. Let it sit at room temperature for about 30 minutes.

    Grill the Steak

    Preheat the grill to high heat. Grill the steak for 4-5 minutes on each side for medium-rare, or to your desired doneness. Remove from heat and let it rest for 5 minutes before slicing.

For the Aji Celery Root Puree

    Prepare the Celery Root

    Peel and chop the celery root into small cubes. Place it in a pot and cover with water. Bring to a boil and simmer until tender, about 20 minutes.

    Blend the Puree

    Drain the celery root and transfer it to a blender. Add heavy cream, butter, aji amarillo paste, and salt. Blend until smooth and creamy. Adjust seasoning if needed.

For the Barbacoa Mushroom Bordelaise

    Sauté the Shallots and Mushrooms

    In a saucepan, heat a little olive oil over medium heat. Add finely chopped shallots and sauté until translucent. Add sliced mushrooms and cook until browned.

    Simmer the Sauce

    Add red wine, beef broth, thyme, salt, and black pepper to the pan. Bring to a simmer and reduce the sauce by half, about 15-20 minutes.

For the Grilled Asparagus and Charred Pearl Onions

    Prepare the Vegetables

    Trim the asparagus and peel the pearl onions. Toss both in olive oil, salt, and black pepper.

    Grill the Asparagus

    Preheat the grill to medium heat. Grill the asparagus for about 5-7 minutes until tender and slightly charred. Add the pearl onions in the last 3 minutes of grilling.

    Finish with Cheese

    Once grilled, sprinkle the grilled asparagus and pearl onions with shredded Manchego cheese and let melt slightly before serving.
