Preparation

    Prepare the Coconut Sticky Rice

    Rinse the jasmine rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice, coconut milk, sugar, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes until the rice is tender and the liquid is absorbed.

    Make the Mango Relish

    In a bowl, combine diced mango, sliced shiitake mushrooms, chopped red onion, cilantro, and lime juice. Mix well and set aside.

    Prepare the Mango-Curry Aioli

    In a small bowl, mix together mayonnaise, mango puree, curry powder, and lime juice until smooth. Set aside.

Cooking

    Cook the Snapper

    Season snapper fillets with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Cook fillets for about 4-5 minutes on each side or until cooked through and flaky.

    Sauté the Vegetables

    In another skillet, heat olive oil over medium heat. Add minced garlic, julienned carrots, and sauté for 3-4 minutes. Add spinach and cook until wilted, about 2 minutes.

Assembly

    Plate the Dish

    On a plate, serve a portion of coconut sticky rice. Top with sautéed vegetables, then place the snapper fillet on top. Spoon mango relish over the fish and drizzle with mango-curry aioli.
