Preparation
Make the Tart Crust
In a bowl, mix honey crispy rice cereal, melted butter, brown sugar, and sea salt until well combined. Press the mixture into a tart pan to form the crust. Bake at 350°F (175°C) for 10 minutes, then let cool.
Prepare the Chocolate Filling
In a saucepan, heat heavy cream until just boiling. Remove from heat and add milk chocolate, orange zest, and orange juice. Stir until smooth, then pour into the cooled tart crust.
Chill the Tart
Refrigerate the tart for at least 2 hours, until set.
Prepare the Dark Chocolate Glaze
Melt dark chocolate and heavy cream in a small saucepan over low heat. Stir until smooth. Pour over the chilled tart.
Make the Caramel
In a saucepan, heat granulated sugar over medium heat until it melts into a golden caramel. Remove from heat and carefully stir in heavy cream and butter. Let cool slightly.
Assemble the Tart
Drizzle the caramel over the tart and sprinkle with sea salt. Serve with a scoop of triple chocolate gelato.
