Combine Ingredients
Add the diced pancetta to the pot and cook for another 2 minutes. Then, add the cooked white beans, chicken broth, thyme, and bay leaves. Stir well to combine.

Braise the Pork
Return the seared pork osso buco to the pot, ensuring they are submerged in the broth mixture. Bring to a simmer, then cover and reduce to low heat. Allow to braise for about 1.5 to 2 hours, or until the pork is tender.

Prepare the Root Beer Reduction
In a small saucepan, bring the root beer to a boil and then reduce to a simmer. Cook until the liquid is reduced by half and thickened slightly. This should take about 15-20 minutes.

Serve
Once the osso buco is done, serve it over the bean cassoulet with a drizzle of root beer reduction on top. Garnish with pickled mustard seeds.
