Cooking Instructions

  1. 1

    Prepare the Pork Osso Buco

Season the pork osso buco pieces with salt and black pepper. In a large, heavy pot, heat olive oil over medium-high heat. Sear the pork pieces for about 4-5 minutes on each side until browned. Remove the pork and set aside.

  2. 2

    Sauté Vegetables

In the same pot, add diced carrots, celery, onion, and garlic. Sauté for about 5-7 minutes until the vegetables are softened.

  3. 3

    Combine Ingredients

Add the diced pancetta to the pot and cook for another 2 minutes. Then, add the cooked white beans, chicken broth, thyme, and bay leaves. Stir well to combine.

  4. 4

    Braise the Pork

Return the seared pork osso buco to the pot, ensuring they are submerged in the broth mixture. Bring to a simmer, then cover and reduce to low heat. Allow to braise for about 1.5 to 2 hours, or until the pork is tender.

  5. 5

    Prepare the Root Beer Reduction

In a small saucepan, bring the root beer to a boil and then reduce to a simmer. Cook until the liquid is reduced by half and thickened slightly. This should take about 15-20 minutes.

  6. 6

    Serve

Once the osso buco is done, serve it over the bean cassoulet with a drizzle of root beer reduction on top. Garnish with pickled mustard seeds.
