    Prepare the Lamb Rack

    Preheat the oven to 400°F (200°C). Rub the lamb rack with olive oil, salt, pepper, and thyme. Sear in a hot pan for about 2-3 minutes on each side until browned.

    Roast the Lamb

    Transfer the lamb rack to the oven and roast for 15-20 minutes for medium-rare, or until desired doneness. Let it rest for 10 minutes before slicing.

    Make the Gratin

    Thinly slice the potatoes and celery root. In a baking dish, layer the potatoes and celery root, seasoning each layer with salt and pepper. Pour heavy cream over the top and sprinkle with grated Gruyère cheese. Bake in the oven for 30-35 minutes until golden and bubbly.

    Blanch the Broccolini

    In a pot of boiling salted water, blanch the broccolini for 3-4 minutes until tender. Drain and set aside.

    Prepare the Demi-glace

    In a saucepan, combine port wine and Dijon mustard. Simmer over medium heat until reduced by half, stirring occasionally.

    Serve

    Slice the lamb rack and serve it alongside the potato-celery root gratin and broccolini. Drizzle with port-Dijon demi-glace.
