Method

Prepare the Crust

  1. 1

    Make the Crust

In a bowl, mix brown sugar, flour, melted butter, and salt until crumbly. Press mixture into the bottom of a springform pan.

  2. 2

    Pre-bake the Crust

Preheat the oven to 350°F (175°C). Bake the crust for 10 minutes, then remove and let it cool.

Make the Cheesecake Filling

  1. 3

    Blend the Filling

In a large mixing bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and heavy cream until fully combined.

  2. 4

    Bake the Cheesecake

Pour the cheesecake mixture over the pre-baked crust. Bake for 50-60 minutes until the top is deeply golden and the center is slightly jiggly. Turn the oven off, crack the door, and let the cheesecake cool for 1 hour inside the oven.

Prepare the Port Reduction

  1. 5

    Make the Reduction

In a saucepan, combine port wine and granulated sugar. Bring to a simmer over medium heat and reduce until thickened, about 20 minutes. Allow to cool.

Serve

  1. 6

    Serve the Cheesecake

Remove the cheesecake from the springform pan, drizzle with port reduction, and serve.
