Method

Polenta Preparation

    Cook the Polenta

    In a large saucepan, bring 4 cups of water to a boil. Add 1 tsp of salt. Gradually whisk in the 1 cup of polenta, stirring continuously to prevent lumps.

    Simmer the Polenta

    Reduce the heat to low and cook for about 30 minutes, stirring frequently, until the polenta is thick and creamy.

    Add Cheese and Butter

    Remove from heat and stir in the grated Parmesan cheese and butter until melted and well combined. Spread the polenta onto a parchment-lined baking sheet and let it cool completely.

Salsiccia Preparation

    Cook the Sausage

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Remove the sausage from its casing and crumble it into the skillet. Cook until browned and cooked through, about 8-10 minutes.

    Add Garlic and Parsley

    Add the minced garlic and chopped parsley to the sausage. Cook for another 2 minutes until fragrant. Remove from heat and set aside.

Assembly and Grilling

    Prepare Skewers

    Once the polenta has cooled, cut it into cubes. Thread a piece of polenta and a portion of the sausage onto each skewer. Repeat until all ingredients are used.

    Brush with Olive Oil

    Brush the assembled skewers with olive oil to prevent sticking.

    Grill the Skewers

    Preheat a grill or grill pan over medium-high heat. Grill the skewers for about 5-7 minutes, turning occasionally, until the polenta is crispy and the sausage is heated through.
