Method

Preparing the Polenta

  1. 1

    Cook the Polenta

In a medium saucepan, bring the water to a boil. Add salt and gradually whisk in the cornmeal to prevent lumps. Reduce heat to low and cook, stirring frequently, until thickened and creamy, about 30-40 minutes.

  2. 2

    Add Cheese and Butter

Once the polenta is cooked, stir in the grated Parmesan cheese and butter. Mix well until the cheese is melted and fully incorporated. Remove from heat and let cool slightly.

  3. 3

    Form Polenta Squares

Pour the polenta into a greased baking dish and spread evenly. Allow it to cool completely, then cut into squares or rectangles.

Cooking the Salsiccia

  1. 4

    Prepare the Sausage

Remove the casing from the Italian sausage links. Shape the sausage meat into small balls or logs, about the size of a golf ball.

  2. 5

    Cook the Sausage

In a skillet, heat olive oil over medium heat. Add the sausage balls and cook until browned and cooked through, about 10-12 minutes. Remove from heat.

Assembling the Skewers

  1. 6

    Skewer the Ingredients

On wooden skewers, alternate between pieces of polenta and cooked sausage. You can add a fresh rosemary sprig between each piece for extra flavor.

  2. 7

    Grill the Skewers

Preheat a grill or grill pan over medium heat. Place the skewers on the grill and cook for about 5-7 minutes on each side until they are heated through and have nice grill marks.

Serving

  1. 8

    Serve Hot

Remove the skewers from the grill and let them cool slightly before serving. Serve warm as an appetizer or main dish.
