1. Prepare the Batter

In a large mixing bowl, combine the whole grain flour, whey protein powder, baking powder, and salt. Whisk together until well blended.

2. Mix Wet Ingredients

In another bowl, whisk together the milk, eggs, and vanilla extract until smooth. Melt the coconut oil or butter and add it to the wet mixture.

3. Combine Mixtures

Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Let the batter sit for a few minutes to thicken.

4. Cook the Pancakes

Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.
