Preparation Instructions

  1. 1

    Make the Croquettes

In a mixing bowl, combine the smoked salmon, mashed potatoes, green onions, fresh dill, beaten egg, salt, and black pepper. Mix until well blended.

  2. 2

    Form the Croquettes

Shape the mixture into small patties or balls. Roll each croquette in bread crumbs to coat evenly.

  3. 3

    Cook the Croquettes

In a skillet, heat olive oil over medium heat. Fry the croquettes until golden brown and crispy on all sides, about 3-4 minutes per side. Remove from the skillet and drain on paper towels.

  4. 4

    Prepare Lemon Rouille

Serve the croquettes with a lemon rouille made from mixing mayonnaise, minced garlic, lemon juice, and a pinch of salt together until smooth.
