Method
Cooking the Beef Tenderloin

Prepare the Beef
Preheat the oven to 400°F (200°C). Season the beef tenderloin generously with salt and black pepper.

Sear the Beef
In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the beef tenderloin on all sides until browned, about 2-3 minutes per side.

Roast the Beef
Transfer the skillet to the preheated oven and roast for 20-25 minutes or until the internal temperature reaches 135°F (57°C) for medium-rare. Remove from oven and let rest for 10 minutes before slicing.
Making Bearnaise Sauce

Prepare the Reduction
In a small saucepan, combine shallots, white wine vinegar, and dry white wine. Simmer until reduced by half, then let cool.

Whisk the Egg Yolks
In a heatproof bowl, whisk egg yolks and the cooled reduction together over a pot of simmering water. Whisk until thickened.

Add Butter and Season
Gradually whisk in melted butter until the sauce is thick and emulsified. Stir in chopped tarragon, salt, and black pepper.
