    Cook the Potatoes

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the bistro potatoes and season with salt. Cook until golden brown and tender, about 10-12 minutes, stirring occasionally.

    Add Onions and Peppers

    Add the chopped onion and diced bell pepper to the skillet. Cook for an additional 5 minutes, or until the vegetables are softened.

    Incorporate Corned Beef

    Stir in the hand-carved corned beef and cook until heated through, about 5 minutes. Season with black pepper to taste.

    Fry the Eggs

    In a separate frying pan, heat the remaining tablespoon of olive oil over medium heat. Crack the eggs into the pan and fry to your desired doneness (sunny-side up, over-easy, etc.).
