    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Wash and halve the baby potatoes. In a large mixing bowl, toss the potatoes with duck fat, salt, and black pepper until evenly coated.

    Roast the Potatoes

    Spread the potatoes out on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes or until golden brown and tender. Stir halfway through for even cooking.

    Cook the Pearl Onions

    While the potatoes are roasting, bring a small pot of water to a boil. Add the pearl onions and blanch for 2-3 minutes. Drain and transfer them to an ice bath to stop the cooking process. Once cooled, peel the onions.

    Assemble the Gratin

    In a large baking dish, combine the roasted potatoes, blanched pearl onions, and cornichons. Layer the Raclette cheese on top of the mixture.

    Bake the Gratin

    Return the dish to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.

    Serve

    Remove the gratin from the oven and let it sit for a few minutes. Serve warm with slices of artisan salumi on the side.
