Add Eggs
Add eggs one at a time, mixing well after each addition until smooth and glossy.

Bake the Puffs
Preheat oven to 400°F (200°C). Drop spoonfuls of dough onto a baking sheet lined with parchment paper. Bake for 20-25 minutes until puffed and golden. Let cool.
Vanilla Bean Ice Cream

Make the Base
In a saucepan, combine heavy cream, whole milk, sugar, and the seeds from the vanilla bean. Heat over medium until sugar is dissolved.

Chill and Churn
Return the mixture to the saucepan and cook over low heat until it thickens. Chill the mixture in the refrigerator, then churn in an ice cream maker according to the manufacturer's instructions.
Chocolate Sauce

Prepare the Sauce
In a small saucepan, heat heavy cream until just simmering. Remove from heat and add chocolate chips and butter, stirring until smooth.
Assembly

Serve
Cut the profiteroles in half, fill with vanilla bean ice cream, drizzle with warm chocolate sauce, and serve immediately.
