    Prepare the Tuna

    Cut the fresh sushi-grade tuna into small, uniform cubes and place them in a mixing bowl.

    Mix Ingredients

    Add the chopped capers, cornichons, Dijon mustard, olive oil, lemon juice, salt, and black pepper to the bowl with the tuna. Gently mix to combine all ingredients.

    Taste and Adjust

    Taste the mixture and adjust seasoning with more salt, pepper, or lemon juice if necessary.

    Chill

    Cover the mixing bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
