Prepare the Mahi Mahi
Season the Mahi Mahi fillets with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Add the fillets and sear for 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.

Make the Provençal Sauce
In the same skillet, add minced garlic and sauté for 30 seconds until fragrant. Add cherry tomatoes and Kalamata olives, cooking for another 3-4 minutes until the tomatoes are slightly softened. Stir in chopped basil and remove from heat.

Serve
Plate the seared Mahi Mahi and top with the Provençal sauce. Serve alongside a generous scoop of crème fraîche mashed potatoes and enjoy.
