    Cook the Bacon

    In a skillet over medium heat, cook the applewood smoked bacon until crispy. Remove from the skillet and let drain on paper towels. Once cooled, chop into bite-sized pieces.

    Caramelize the Onions

    In the same skillet with some of the bacon drippings, add the medium onion (sliced) and cook over low heat until caramelized, about 15-20 minutes, stirring occasionally. Remove from heat.

    Prepare the Omelet

    In a bowl, beat the eggs. In a clean skillet, melt butter over medium heat. Pour in the beaten eggs and let cook undisturbed until the edges begin to set.

    Fill the Omelet

    Once the edges are set, add the caramelized onions, chopped bacon, and Emmentaler cheese on one half of the omelet. Gently fold the other half over the filling.

    Finish Cooking

    Cook for another 2-3 minutes until the cheese is melted and the omelet is cooked through. Slide onto a plate and serve immediately.
