King Oyster Mushroom Steak Recipe

    Prepare the Pistou

    In a food processor, combine fresh basil, garlic, olive oil, lemon juice, salt, and black pepper. Blend until smooth and set aside.

    Prepare the Almond Aillade

    In a small pan, toast the almonds until golden brown. Remove from heat, let cool, then blend with garlic, olive oil, salt, and black pepper until a coarse paste forms.

    Cook the Spinach

    In a skillet, heat a tablespoon of olive oil over medium heat. Add the fresh spinach and sauté until wilted. Season with salt and pepper to taste.

    Cook the King Oyster Mushrooms

    Slice the King Oyster mushrooms into thick slabs. In the same skillet, add a tablespoon of olive oil and sear the mushroom slices on both sides until golden brown and tender, about 5-7 minutes.

    Plate the Dish

    On each plate, place a generous amount of sautéed spinach. Top with the seared King Oyster mushroom steaks. Drizzle the Provençale pistou over the mushrooms and finish with dollops of almond aillade.
