Method

Baking Directions

  1. 1

    Preheat the Oven

Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with cooking spray.

  2. 2

    Mix Dry Ingredients

In a large bowl, whisk together flour, sugar, baking powder, and salt until well combined.

  3. 3

    Combine Wet Ingredients

In another bowl, mix the milk, melted butter, eggs, and vanilla extract until smooth.

  4. 4

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.

  5. 5

    Add Blueberries or Nuts/Seeds

Fold in the blueberries or nuts/seeds if making the healthy start version.

  6. 6

    Fill Muffin Tin

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

  7. 7

    Bake

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.

  8. 8

    Cool and Serve

Allow muffins to cool in the pan for a few minutes before transferring them to a wire rack. Serve warm or at room temperature.
